Guest guest Posted February 1, 2003 Report Share Posted February 1, 2003 When I was making this recipe from a magazine where I ran across it, it listed 3 teaspoons of vanilla! I thought that kind of sounded like a bit much for my taste, so I only put in one. Worked just fine. Here is my version of the recipe: Honey Corn Bread 1 cup all-purpose flour 3/4 cup cornmeal 1/4 cup sugar 1 tsp baking powder 1 tsp baking soda Dash of salt 1 1/3 cups half & half cream 1 cup frozen corn 1/4 cup butter or margarine, melted 1/4 cup honey 1 egg 1 tsp vanilla extract In a bowl, combine the flour, cornmeal, sugar, baking powder, baking soda and dash of salt. In another bowl combine the remaining ingredients; stir into dry ingredients until just moistened. Pour into a greased 9 inch ovenproof skillet. Bake at 425 for 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Cut into wedges; serve warm.
