Guest guest Posted January 31, 2003 Report Share Posted January 31, 2003 This one was an idea my daughter and I read in a kids cook lunchbox idea booklet that we thought she would like. We used a veggie cream cheese spread. We also seeded the cucumber wedges. Cucumber Wraps 1/2 cup plain or herbed spreadable cream cheese 4 whole wheat flour tortillas (8 inch size) 1 cucumber (6 inches long) quartered lengthwise Salt, sprinkle (optional) Pepper, sprinkle (optional) 1. Spread 2 Tbs. cream cheese with a knife on each tortilla. 2. Lay 1 cucumber spear on 1 edge of each tortilla. Sprinkle with the salt and pepper. Roll each tortilla around around the cucumber. Wrap tightly with plastic wrap. Chill for at least 1 hour.
