Pepper Jack Potatoes

6 medium potatoes, peeled and cut into 1/4-inch slices

1 medium onion, sliced

1/3 cup butter or margarine, melted

1/2 tsp salt

1/4 tsp chili powder

1/8 tsp cayenne pepper

1/8 tsp pepper

2 1/2 cups pepper Jack or Monterey Jack cheese, divided

Salsa, optional

In a large bowl, combine the potatoes and onion. Combine the butter

and

seasonings; drizzle over the potato mixture and toss to coat. Place

half in a

greased 13x9x2 inch baking dish. Sprinkle with hald of the cheese;

top with

remaining potato mixture.

Cover and bake at 400 degrees for 45 to 50 minutes or until potatoes

are

tender. Uncover; sprinkle with remaining cheese. Bake 5 minutes

longer or

until cheese is melted. Serve with salsa if desired.

Yield: 10 servings

To live content with small means; to seek elegance rather than

luxury, and

refinement rather than fashion; to be worthy, not respectable, and

wealthy, not rich; to listen to stars and birds, babes and sages, with

open

heart; to study hard; to think quietly, act frankly, talk gently,

await occasions,

hurry never; in a word, to let the spiritual, unbidden and

unconscious, grow

up through the common-- this is my symphony.

~William Henry Channing, clergyman, reformer (1810-1884)
