Guest guest Posted January 30, 2003 Report Share Posted January 30, 2003 We dice about 8 tomatoes We pour a quarter cup of olive oil, maybe half a cup if we slosh a bit much, into a large mixing bowl. Into that goes about a dozen diced cloves of garlic. Add five to ten tablespoons of oregano. Add a tablespoon or two of black pepper. (all of this is to taste, obviously) Mix all this and add tomatoes. serve over penne noodles, (half cup per serving) garnish with sliced almonds, black olives, and either mozarella or feta cheese as you like. delicious, quick, and makes a nice cool meal in summer, although we just had it last night.
