Tonight I am planning to fix: Scalloped Potatoes Herbed Corn Tossed Salad Breadsticks ~ PT ~ Who knows how long I've loved you, you know I love you still. Will I wait a lonely lifetime? Quinoa - Corn Chowder 2 cups water 1/4 cup quinoa, (rinsed) 1/2 cup potato, cubed 2 TBS carrot, diced 1/4 cup onion, chopped 1 1/2 cups corn, (fresh, frozen, or canned) 2 cups milk (rice or soya) 1 TSP salt dash black pepper 1/4 cup parsley, chopped Simmer quinoa, potato, carrot and onion until tender (about 15 minutes). Add corn. Bring back to boil, and simmer an other 15 minutes. Add milk. Bring just to boil. Season to taste. Garnish with parsley. Serves 4-6.
