I fixed an extra one for my own lunch so I could try it, and since I missed breakfast I just ate it as a brunch....very delicious. It held up well, too. We fixed these yesterday at around 4pm and were both wondering if they might get soggy, but they didn't. Vegetable Roll 1 Tbs plain spreadable cream cheese 1 Tbs ranch (or other creamy) dressing 1 whole wheat flour tortilla (10 inch size) 2 Tbs grated carrot 2 Tbs finely chopped green or red bell pepper 2 tsp finely chopped green onion 3 Tbs finely chopped broccoli florets 1/4 cup grated cheddar cheese 1. Combine the cream cheese and dressing with a mixing spoon in a small bowl. Spread this over the tortilla. 2. Sprinkle the remaining 5 ingredients on the cream cheese mixture in the order given. Roll up tightly. Wrap in plastic wrap. Chill for at least 1 hour.
