Guest guest Posted January 28, 2003 Report Share Posted January 28, 2003 hello all... i'm new here. i've been a vegetarian (tho i eat fish, eggs and milk) for eight years now. i'm in college so i hate cooking but these are really good, cheap sandwiches to make when you have a minute and want something warm. 1 bag frozen peppers (i use red, green, and yellow) 1 bag or can frozen mushrooms 1 onion hoagie style buns your fav cheese red vinegrette dressing (i use red raspberry vinegrette dressing) teaspoon olive oil half teaspoon italian seasoning put half the bag of veggies, a third of a chopped onion, a teaspoon of olive oil, and half a bag of mushrooms (or a whole little can) into a heated skillet. cook until all the water from the veggies is gone and the onions are almost clear. stir in the italian seasoning and salt and pepper to taste. take a hoagie-style bun and put your favorite cheese on the bottom side. put your veggies on top, drizzle with vinegrette. yum!
