Guest guest
Obviously not a vegan sellection, but for those here who are lacto-ovo, this recipe is very good. The bread freezes well; just omit the glaze and do that after thawing. Honey Spice Bread 2/3 cup packed brown sugar 1/3 cup milk 2 cups all-purpose flour 1 1/2 tsp baking powder 1/2 tsp cinnamon 1/2 tsp nutmeg 1/8 tsp ground cloves 2 eggs 1/2 cup honey 1/3 cup vegetable oil Glaze: 1/3 cup confectioners sugar 2 tsp milk In a sauce pan over low heat, cook and stir brownsugar and milk for 5 minutes or until sugar is dissolved. Remove from heat. In a large bolw, combine dry ingredients. In another bowl, combine the eggs, honey, oil and brown sugar mixture; mix well. Stir into dry ingredients just until moistened. Pour into a greased 8x4x2 inch loaf pan. Bake at 350 degrees for 55 to 60 minutes or until a toothpick inserted in center come out clean. (cover with foil if top browns too quickly). Cool for 10 minutes before removing from pan. After loaf is quite cool, combine glaze ingredients until smooth and drizzle over top of loaf. Yield: 1 loaf ~ P_T ~ The woods are lovely, dark and deep. / But I have promises to keep, / And miles to go before I sleep / And miles to go before I sleep. ~Robert Frost, poet (1874-1963)
