Marinated artichokes and eggplant

This is quite simple, not so much a recipe as a

preparation.

 

Take an old pickle jar, and some artichoke and

eggplant.

 

Cube the eggplant after peeling it (you probably wont

need the whole eggplant)

 

Clean the artichoke, keep the hearts and quarter them.

 

Toss in jar with 1 part white vinegar to 2 parts

vegetable oil, along with basil, some sweet peppers,

some dried chili flakes and some oregano maybe some

roasted red peppers and zucchini dials too.. whatever

you feel like experimenting with.. it's pretty low

risk. I put ginger slices in one of the four jars im

doing right now.

 

Cover tightly, making sure all the veg is covered with

liquid, and let is sit for a while, maybe a few days

or so, mine are going on about day 3 now, and they are

starting to look really tasty:)
