Just process a tin of chickpeas (with a bit of the liquid) , about 2 tablespoons of tahini, as much or as little fresh garlic as you want [but remember that the garlic flavour develops so it's best to start off conservatively, you can always add extra], juice of 1/2 - 1 lemon, salt and freshly ground pepper. You can also add a bit of olive oil if you like but it isn't really essential. I sometimes make this with a bit of fresh coriander (cilantro) but again, it isn't essential Baba ganoush is also great for buffet spreads but it is a bit fiddlier than hummous. Prick a medium eggplant with a firk and put the aubergine in a 375° oven until it is tender. Remove it from the oven and allow it to cool sufficiently to handle. Scrape out the flesh into a bowl and combine it with 1 tsp salt, 2 cloves on chopped garlic (or more to taste), lemon juice (about 1 large lemon), 2-3 tblps tahini. Mash or lightly rocess everything together and leave for at least 1 hour for the flavours to develop. Sprinkle a little olive oil over the surface and top with a pinch of spice such as cumin or paprika.Seems my ~wonderful~ fiance volunteered me to to make the superbowl spread.
