They kind of use a mixed way of speaking that combines many languages in with broken english ( called pigin) . I think the word shoyu is Japanese, but I am not sure. Bottom line is it is soy sauce. A daikon is a raddish. I have had it shredded and added to sandwiches on crusty French bread served in Vietnamese delis. Mm. I think it is slightly milder than the raddish we see in our markets, but I am not sure. I just use a regular raddish in this recipe with good results.
