I really like it in the spring but sinces it's a baked dish, winter is a good time for it too. Warmly, Allison Crust: 3/4 cup whole wheat flour 3/4 cup all-purpose (unbleached) 1 stick butter 1 egg yolk 1 tsp cider vinegar 3-4 Tsp water Filling: 3 small onions, sliced 1 Tbsp olive oil 1 medium tart apple (granny smiths are great)peeled and shredded 1/2 tsp curry powder 4-5 large firm tomatoes 1 tsp slat 1 tsp rosemary 2 cups shredded mozzarella cheese 1) In a large mixing bowl, combine the flours. Cut in butter until mixture crumbs 2) In a small bowl, beat together egg yolk, vinegar and water. With a fork, stir mixture into flour. Blend to form a firm dough. Roll and wrap in plastic. Chill in fridge for about an hour. 3) Preheat oven to 425. Turn pastry ou onto floured surgace. Roll out to a 10 " circle and place in 1.5 quart oval baking dish (don't freak out if you don't have an oval one...Just use what you have). Pierce bottom with a fork. Cover with foil and pie weights (I use aluminum foil weighted with dried beans). Bake about 15 minutes. 4) To prepare filling, in a large skillet, heat oil and cook onions until soft. Turn into a bowl. Add apple, curry powder and 1/2 tsp salt. Toss to combine. 5) Sprinkle the bottom of cooled crust with 1/2 cup cheese. Top with apple mixture. Arrange the sliced tomatoes over top in an even layer. Sprinkle with herbs and remaining cheese. Bake at 425 about 25 minutes. Transfer to wire rack and cool slightly.
