I don’t dare NOT obey the mighty list owner, hm? So tonite we had chili. I don’t believe in following a recipe for things like chili, generally, so all measurements are vague approximations. I didn’t measure anything; I just threw in what I had on hand. Here’s tonite’s concoction: Chili ½ tbsp olive oil 3 stalks celery, chopped 1 onion, chopped 1 green pepper, chopped 1 red pepper, chopped 6 cloves garlic, minced 3 jalapenos, finely chopped 2 cans diced, peeled tomatoes, including the liquid (you could use fresh, of course) 2 cans black beans, rinsed and drained 1 can baked beans 1 – 2 tbsp chili powder 1 tsp crushed red pepper flakes 1 – 2 tsp cayenne pepper ½ tsp cumin ¼ tsp freshly cracked black pepper Saute celery, onion, green and red peppers, garlic and jalapenos in olive oil until onions are transparent. Add tomatoes and beans, and season to taste, depending on how much bite you like your chili to have. Simmer, stirring occasionally for at least 30 minutes, but longer is always better. The colours in this were wonderful! It looked and tasted great, with just enough bite, but not so much that it overpowered the delicious flavours of the veggies and beans. P_T, you’ll get a kick out of this: the bf was standing around talking to me while I threw this together, not particularly interested until it started to smell good. Then he promptly went in search of a pen and paper and tried to remember what I had done so that he could write himself a recipe. He said my food always looks so much better than anything he cooks, because as soon as you add meat everything starts to look brown/grey. I think most meat-eaters are pleasantly surprised about our delicious food after seeing how we do what we do, and eventually realise they do not miss the brown flesh stuff at all in the recipes. It just tastes better and looks better.... not to mention smell. Bravo to you. I will put this recipe in our 'stews' file.
