Guest guest Posted January 22, 2003 Report Share Posted January 22, 2003 Okay, I know it might be cheating to use a can (or two in this case) of canned soup in a soup recipe, but this recipe is something I found when looking for a good way to use up leftover mashed potatoes. The results are good, and it couldn't be easier to throw together when you are pressed for time. Easy Celery Potato Chowder 1 medium onion, chopped 2 celery ribs, chopped 1/2 cup sliced fresh mushrooms 1 Tbs butter or margarine 2 cups frozen corn, thawed 1 can (10.75 oz) condensed cream of celery soup, undiluted 1 can (10.75 oz) condensed cream of mushroom soup, undiluted 1 1/2 cups milk 1 cup mashed potatoes Sprinkling of bacos (optional) In a large saucepan, saute onin, celery and mushrooms in butter until tender. Add the corn, soups, milk and mashed potatoes. Cook and stir over meduim heat until heated through. Garnish in bowls with a sprinkle of bacos.
