Guest guest
This is a very simple recipe. The only prep changes I made were to dilute the cream of mushroom soup a bit with some water and drizzled some between the layers. As it was written, I just didn't trust that the flavors would mingle well enough during the baking process. Tofu-Potato Casserole 4 to 6 medium potatoes, peeled and sliced 1 block firm tofu 1 tsp salt 1/2 tsp. pepper 1/2 cup chopped onion 1 can cream of mushroom soup, undiluted Make layers of potatoes, crumbled tofu, sprinkling salt, pepper and onions. Add soup, spreading evenly. Cover and bake at 350 degrees for 1 hour or until potatoes are done. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~> Music was my refuge. I could crawl into the spaces between the notes and curl my back to loneliness. ~ Maya Angelou, poet (1928- )
