Pat's zucch. veg burgers

Good to have you back with us, Pat. I just added this recipe to our

files under

'sandwiches'... sounds delicious. I can't wait to start my garden up

and fill it

with magical zucchini. :)

Just get ONE zucchini plant.... or be prepared to trudge

around the neighborhood begging neighbors to take them off

your hands....

 

After the neighbors start running away screaming whenever

they see you, you can get rid of some of them by walking

around downtown, dropping zucchini off in any cars whose

owners were foolish enough to leave the window down...

 

Actually, you can shred it and freeze for later use in these

burgers or in zucchini bread or muffins. I froze a lot of

it last year: we still had enough for the whole

neighborhood, plus more.

Yeah, that can be a problem, though it never has been for me. I

usually only

have two plants. I always have plenty to shred and make zucchini

breads. My

son calls them magical b/c they do seem to magically appear

overnight. ;)

 

I like them tender and small and have a difficult time letting them

grow big

enough to make stuffed zucchini boats.
