Guest guest Posted January 19, 2003 Report Share Posted January 19, 2003 When I don't have a jar on hand of my other more involved recipe of tomato sauce, this one serves me quite well. Very quick to prepare. I usually add garlic though. Easy Tomato Sauce (for lasagne or casseroles) 1/2 cup onion, finely minced 1 carrot, grated 2 cups fresh mushrooms, sliced or chopped 1 Tbs. olive oil 2 cans (8 oz each) tomato sauce 1 can (6 oz ) tomatoe paste 1 tsp dried oregano 1 tsp dried basil In hot oil, sauter onion and mushrooms until tender. Add carrot, tomato sauce, tomato paste, oregano, and basil. Simmer for 10 minutes. Add a bit of water gradually while stirring if sauce is too thick.
