Lasagna (the easy way)

The bf is coming over tomorrow nite, and since he asked if it was

possible to make vegetarian lasagna, I thought I’d make one (always

better to show him it tastes good, rather than just tell him, I’ve

found). But, I got home late and didn’t have time to do much, so I

“cheated” and didn’t do anything from scratch. I just had a piece, and

it was delicious!

 

Lasagna

 

1 box Lasagna noodles (I always prefer the ones that you have to boil,

but I suppose you could use the others)

2 jars meatless pasta sauce

2lb container ricotta cheese

2 eggs

parsley (I didn’t measure, but I’m guessing I used about 3 tbsp dried,

or you could use fresh)

salt and pepper to taste

1 bag shredded mozzarella

 

Boil the lasagna noodles until just tender; drain. While the noodles

are cooking, combine ricotta, eggs, parsley, salt and pepper. Spread a

little sauce in the bottom of a 9 x 13 pan, then layer as follows:

lasagne noodles; 1/3 of the sauce; lasagna noodles; ½ of the ricotta

mixture; lasagna noodles; 1/3 of the sauce; lasagna noodles; ½ of the

ricotta mixture; lasagna noodles; 1/3 of the sauce. Top with shredded

mozzarella. Bake at 350 until bubbly and hot, about 35 – 40 minutes.

Let set about 10 minutes, then serve and enjoy!

 

It made a HUGE lasagna, so the bf better like it! I’ll be sending most

of it home for him and the kids.

Sounds wonderful. Thanks for posting it, Sherri. I just placed it in

the files

section in 'main dishes> pasta' folder. I titled it 'Easy Way

Lasagna' and

gave credit to you, of course. ;)

 

Let me see.... I would think it safe to guess that you really,

really, really like

*chuckle* ya think? He's easy on the eyes, fun to hang out with, and

he makes me laugh (no easy feat!). AND he doesn't expect me to cook

meat, just cuz he enjoys eating it. I haven't smiled this much in a

long long time, which would be reason enough all on its own. Now if

only he didn't spend so much time paddling, he might be worth keeping!
