I took 1 pico de gallo flavored tortilla (vegetable shortening, no lard), rubbed the top with roasted garlic and then topped it with monteray jack cheese and put in the oven until crisp on bottom and cheese melted on top. Then I layered it with sliced tomatoes, red onion slices, chopped jalps and plenty of avocado slices. Salt and pepper. I mixed together a couple Tbs. of sour cream with taco seasoning and topped it off with that. I recommend these for guests. It looked gorgeous with the orange tortilla, red maters, purple onion, green jalps and the reddish-white sour cream. While not original and very simple, it tasted delicious.
