Guest guest Posted January 1, 2003 Report Share Posted January 1, 2003 For this to be vegan, all you'd need to do is be sure the bread you used in the recipe was prepared in that way. Quite yummy and the inspiration for this came from my new cookbook I got for Yule. I copied it from the book as it appeared and highlighted the changes I made with this: ~*~ I ate this over brown rice. Mmmmmm Spinach And Canellini Beans (vegan) 8 oz. canellini beans, soaked overnight 4 Tbs olive oil 1 slice bread 1 onion, chopped 3-4 tomatoes, peeled and chopped ~*~ A good pinch of paprika 1 lb. spinach 1 garlic clove, halved ~*~ Salt and pepper 1. Drain bean, place in a saucepan and cover with water. Bring to a boil and boil rapidly for 10 minutes. Cover and simmer one hour until the beans are tender. Drain. 2. Heat 2 Tbs of the oil in a frying pan and fry the bread until golden brown. Transfere to plate. 3. Fry onion in 1 Tbs oil over low heat until soft but not brown, then add the tomatoes and continue cooking over low heat. 4. Heat remaining oil in a large pan, stir in paprika and then add the spinach. Cover and cook a few minutes until the spinach has wilted. 5. Add the tomato and onion mixture to the spinach and stir in canellini beans. Place the garlic and fried bread in a food processor and process until smooth. Stir into the spinach and bean mixture.
