I post a lot of the recipes on this list, and since I am lacto- ovo, most of my contributions reflect that. However, we would love for you to share the recipes you enjoy, and feel free to convert the recipe I have posted to fit your eating style and share with us your methods for doing this. Some of us are vegan, some heading that way, some are lacto-ovo, some aren't either but are interested in vegetarian recipes and cooking, some are in mixed households and living with a vegan or non-vegetarian.... all are welcome, and you most definately so. I hope you will stay on and share your thoughts. I will try to find more vegan recipes to share here. It is one of my New Years resolutions to try more recipes of that type. It is easy to make gluten free by using gluten free flour & baking powder and adding approximately 3 times as much water (add it in slowly until you get the consistency right) and 2 extra tablespoons of oil. Carob powder also works well instead of cocoa if you are that way inclined. easy vegan chocolate cake... 300g self raising flour 50g cocoa powder 3 teaspoons of baking powder 1 cup sugar (raw or refined, I have found it doesn't matter) 5 tablespoons of vegetable oil (olive oil works the best) 400mL water 1. sift flour, baking powder & cocoa into a bowl, mix well 2. add sugar 3. add oil 4. slowly mix in water until batter like consistency. 5. pour into a greased cake tin & bake in a preheated medium oven for approx 20mins, real cooking time will depend on the oven & cake tin, but a skewer test will be accurate. 6. ice when cool & eat. Also if you know of a fudge sauce it is suitable to pour over cake when it is still warm as it soaks into the top layer of cake making it fudgey & sticky. I use melted vegan margarine, a dash of hot water, icing sugar & cocoa mixed together, exact amounts I'm not sure of as it varies each time I make it.
