This was todays lunch, i ate the whole pound :/

Spicy potato salad

500 grams potatoes

125 millilitres broth

3 tablespoons vinegar

3 tablespoons oil

1 tablespoon mustard

 

Cook the potatoes. I prefer to cook them in skin and peel them afterwards.

Slice the potatoes. Meanwhile boil up the broth with half the vinegar.

Put potatoes and vinegar/broth mixture in a bowl and let sit for 30 minutes.

Drain the potatoes and mix the remaining ingredients together.

Add to potatoes and tuck in :)

This is an excellent choice - German Style Potato Salad, more or less,

and if you decide to leaave the skins on the potatoes they are yummy

too. Hot, room temperature, or cold. Toss a few herbs through - whatever

you like - and there's a whole bunch of variations.
