Broccoli Corn Stuffing 1 Tbs chopped onion 3 Tbs butter or margarine, divided 1 can (14.75 oz.) cream-style corn 1 package (10 oz.) frozen chopped broccoli, thawed 1 egg, lightly beaten 1/4 tsp salt, optional 1/4 tsp pepper 1 cup seasoned stuffing croutons, divided In a skillet, saute onion in 1 Tbs butter. In a bowl, combine corn, broccoli, egg, salt if desired and pepper; mix well. Add the onion mixture and 3/4 cup of croutons. Spoon into a greased 1-qt. baking dish. Melt remaining butter; toss with remaining croutons. Sprinkle over the top. Bake, uncovered, at 350 degrees for 30 to 35 minutes or until heated through. Yield: 4 servings. Nutritional Analysis: One 3/4 cup serving (prepared with 1/4 cup egg substitute and without salt) equals 302 calories, 11g fat (6g saturated fat), 23mg cholesterole, 1,054mg sodium, 46g carbohydrate, 5g fiber, 8g protein.
