It’s a creamy, mild dressing/dip that I’m actually not particularly fond of, but its rather popular around here, and its usually a safe choice when serving a large group of varied tastes. I found this recipe, when I was searching for ways to use beans (I’m always worried about protein, cuz I tend to neglect it, and mine gets dangerously low at times). Low-fat Ranch Dip Makes 2 cups 1 15 oz can Great Northern beans, rinsed and drained ¼ cup water ½ cup plain low-fat yogurt ½ tsp garlic powder or 1 tbsp of roasted garlic (I prefer the flavour of roasted garlic, and use even more of this than called for) pinch cayenne pepper ¼ tsp pepper (my preference is freshly cracked, but I’m sure regular ground pepper would work as well) 1 tbsp chopped fresh chives 1 tbsp chopped fresh parsley ¼ tsp dried tarragon ¼ tsp salt (or less) 1 tbsp lemon juice Whiz the beans and garlic in a blender, adding enough water to make the desired consistency (thick enough for dip, but not too thick. It’s a personal preference, really). Blend for 2 full minutes to make it silky smooth. Scrape bean puree into a medium bowl. Stir in the yogurt, cayenne, chives, parsley, tarragon, salt and lemon juice. Adjust seasonings to your personal taste. This is best if you allow the flavours to blend in the refridgerator for awhile.
