Guest guest Posted December 22, 2002 Report Share Posted December 22, 2002 Holiday Greetings to all. I was invited in a while back and have been up to my ears in " stuff. " I just wanted to say hello and I'll jump in a bit later after things calm down. We live in NC. Have two elementary school age children and one preschooler. We live in a very old farm house that we are slowly remodeling. We live very simply and closer to nature than most folks. Sort of like blue jeans, T-shirt, sit on the back deck and drink herb tea kinda family. We like sunsets and moonlight. We make snow cream and snow angels. We prefer the mountains to the beach. We cut down cedar trees for Christmas and string cranberries for garland. Almost everything on our tree is a hand made craft bought locally from different crafty folks. We are Moravian and so many of our things comes from Old Salem (oldsalem.org) a working Moravian settlement that is a tourist attraction for thousands every year. We are not totally veggie but are working on it. I'm not creative or inventive when it comes to cooking or crafts. Hubby will eat veggie dishes but refuses to do the meat subs etc. I'm always open to new casseroles and dishes to serve. It has to be simple. One of the simple things I make is spaghetti made with whole wheat pasta and then I use a large petite diced tomatoes, a can of tomato sauce, a little olive oil, some balsamic vinegar, salt, minced garlic, basil. Then whatever add in I have. I heat oil throw in the garlic throw in green peppers or onion, a little crushed red pepper then I add the diced tomato and sauce and the rest of the ingred simmer until a little thickened.
