He works at a local expensive resturant and this was the only recipe that they would share with him. It's also really easy. But, if you make it, there might not be any left for your guests by the time they get there, you might just eat it all your self! Genie Grilled Balsamic Marinated Portobello Mushrooms 8-9 large Portobello mushrooms 3 medium sized roma tomatoes 1/2 c. balsamic vinegar 1/4 c. extra virgin olive oil 1 t. fresh pesto 2 t. ground feta cheese Soak the mushrooms and peeled and halved tomatoes in vinegar overnight in the fridge. Next day, either on grill or under broiler in oven, grill until cooked... Top with pesto and cheese, grill a couple of minutes more. Drizzle with olive oil. Serve.
