FRIEDA'S BULGUR MEATLESS BALLS 6 tablespoons bulgur wheat cooked in 1 cup water. Let cool 3/4 cup chopped walnuts 2 medium onions chopped 1 cup bread crumbs 4 eggs 2 cups grated cheese or 8 oz. cream cheese Mix together and form into balls. Fry in vegetable oil until brown. Meatball soup tube 'o tofu (Gimmelean in the produce section at Shop-n-Save) 1/2 c. dry bread crumbs 2 tbsp. chopped parsley (dry) 1 egg 1/4 tsp salt and pepper 2 tbsp veg oil 2 c chopped tomatos 1 c chopped carrots (more is good) 1/2 c. chopped onion 1 clove garlic minced 1 tsp. basil 1 tsp. oregano at least 4 cups (your preference) beef-flavored vegie broth. if you don't like the flavor of the beef I would think the veggie broth would be ok, but I don't know 3 c. water 8 oz. medium egg noodles 1/4 c. parmesan cheese ( my kids call this paramecium cheese.) combine the tofu with the other of the first six ingredients and shape this mixture into the cutest little 1 inch balls you can make. put these all into the microwave to cook them most of the way so they won't fall apart. they can continue cooking in the broth later, but they might fall apart. In a big old kettle (or cauldron, if you prefer) heat the oil and saute the tomato, carrots, onion, garlic, basil and oregano until tender but not brown. (I like to drain the oil if there's any left) add your meatball-lets and the broth and water and bring to a boil. reduce heat to med., cover and simmer ~10 mins, watching this like a hawk so that it won't do anything funny. Add the noodles and bring the whole mess BACK to a boil to cook the noodles, stirring pretty much constantly. turn off the heat and add the cheese and serve. This recipe confuses me since I don't know why I would want to make the temp go up and down like that. One thing that is great is to heap some mozzarella cheese on top and let it melt... This really is the best recipe in the kitchen! The little tiny meatballs are really a lot of work, though.
