My husband surprises me with an ingredient and then I have to make two dishes out of it and he judges which is the best one. Yes, we are geeky and easily amused. Of course, the real reason for this contest against myself, I suspect, is that it gives dh the excuse to hog out and eat two dinners. Here is the dish that won " Spinach Battle " : Thai Elvis Pizza. The " Thai " comes from the peanut sauce and basil, the " Elvis " comes from the combination of peanut butter and fakin' bacon. I suppose for it to be truly " Elvis " it would have banana as well, but I'm not brave enough to try that. :-P bleh! Sorry this recipe is not exact--I was too busy cooking to write down what I was doing! Also P.S. to Anna: I had to say Welcome! because Zappa is a cool name for a dog! Can you tell I'm a Zappa fan? 1 refrigerated pizza crust 1 small handful fresh basil leaves, torn roughly, (Thai basil is best if you have it) 2 large handfuls of fresh spinach, washed, drained, and chopped 6-7 pieces Morningstar farms breakfast strips, sliced into little julienne strips Peanut sauce* *I made my own peanut sauce from the following: peanut butter, soy sauce, fresh grated ginger, diced garlic, rice wine vinegar, sugar, red chili oil, dash of sesame oil. I just kept adding the various ingredients until it tasted " right. " Sorry no proportions--a store-bought sauce would do just as well. Press out the dough onto a pizza pan and coat with the peanut sauce. You won't need to coat the dough as much as you would with a red pizza sauce, as peanut sauce is very strong tasting. Top with the spinach and basil, then sprinkle on the fake bacon. Bake according to the directions on the refrigerated dough. Soooo goood.
