Guest guest Posted December 7, 2002 Report Share Posted December 7, 2002 Since I've cut meat out of my diet this time (I've done it before, but always managed to get sick because I didn't do it WELL) I'm being much more careful about eating other protein sources. Beans are a favourite. This recipe is one that my family has used for years and years. I left out the salt-pork when I made them this time, and added a dash of liquid smoke towards the end of the cooking time instead. They were delicious. Baked Beans 3 cups small white beans or more depending on the size of your crockpot. More is ok. I usually just use a full bag. 1 tsp salt or more to taste. 1/2 c chopped onion 1/4 c molasses 1 c ketchup 1/4 c brown sugar 2 tsp dry mustard Soaking the beans overnight helps speed cooking time, but isn't necessary. Put all ingredients in a crock-pot, mix well, and fill with water. Cook on low, stirring occasionally. Simmer until the beans are tender and the sauce has thickened. If the beans have not been soaked this takes at least 24 hrs, sometimes as long as 36, depending on the size and temperature of your crockpot.
