Guest guest Posted November 30, 2002 Report Share Posted November 30, 2002 Jalapeno Hush Puppies 1 cup cornmeal 1/2 cup self-rising flour* 1 Tb sugar 1 1/2 tsp baking powder 1/2 tsp salt 1 egg, lightly beaten 1 cup milk 1/2 cup diced onion 1 Tbs diced jalapeno pepper Oil for deep frying In a bowl, combine cornmeal, flour, sugar, baking powder and salt. Combine the egg, milk, onion and jalapeno; sir into dry ingredients just until moistened. In an electric skillet or deep fryer, heat oil to 375 degrees. Drop batter by tablespoonfuls into oil. Fry for 2 minutes or until golden brown, turning occassionally. Drain on paper towels. Serve warm. Yield: 3 1/2 to 4 dozen *NOTE: As a substitute for 1/2 cup self-rising flour, place 3/4 teaspoon baking powder and 1/4 tsp salt in a 1/2 cup measuring cup. Add enough flour to measure 1/2 cup. When cutting or seeding hot peppers, use rubber or plastic gloves to protect hands.
