Sunburst Lemon Bars

I made these today. Yummy! Sweet, but with a nice lemon tang, and the

shortbread base is delicious.

 

Sunburst Lemon Bars

 

Base:

2 cups all purpose flour

½ cup powdered sugar

1 cup margarine or butter, softened

 

Filling:

4 eggs, slightly beaten

2 cups sugar

¼ cup all purpose flour

1 teaspoon baking powder

¼ cup lemon juice

 

Frosting:

1 cup powdered sugar

2 – 3 tablespoons lemon juice

 

Directions:

Heat oven to 350F.

 

In a large bowl, combine all crust ingredients at low speed until

crumbly. Press mixture evenly into bottom of an ungreased 13x9 pan.

Bate at 350 for 20 to 30 minutes, or until light golden brown.

 

Meanwhile, in a large bowl combine all filling ingredients except lemon

juice. Blend well. Stir in ¼ cup lemon juice. Pour mixture over warm

crust. Return to Oven and bake an additional 25 to 30 minutes or until

top is light golden brown. Cool Completely

 

In a small bowl, combine 1 cup powdered sugar and enough lemon juice for

desired spreading consistency (thin is better, as it will be difficult

to spread a really firm frosting over the delicate top of the bars).

Blend until smooth. Spread over cooled bars. Cut into bars.

 

Yield: 36 bars

These are yummy. I have a similar recipe but the only difference is that yo=

don't frost it with glaze, you dust the tops with powder sugar. The frostin=
