Today has been busy around here. Had to go pick up two loads of wood; then

there is the unloading, and stacking. Fun autumn work outdoors. Made me

hungry. *s*

 

A recipe before I go for the evening.....

 

 

Baked Mushroom Rice

 

1/2 cup uncooked rice

1 1/3 cups reduced sodium fat free vegetable broth

1 cup sliced fresh mushrooms

1 medium onion, chopped

1/4 tsp dried basil

1/4 tsp dried oregano

1/8 tsp lemon-pepper seasoning

 

Combine all ingredients in a 1 1/2 qt. casserole coated with nonstick cooking

spray. Cover and bake at 350 for 45 minutes or until rice is tender. Yield: 4

servings

 

Diabetic exchanges: one 3/4 cup serving equals 1 starch, 1/2 vegetable; also,

96 calories, 63 mg sodium, 0 cholesterol, 20 gm carbohydrate, 3 gm protien,

trace fat.
