Guest guest Posted November 20, 2002 Report Share Posted November 20, 2002 The reason that most people are afraid of veggie folks could simply be that they have never actually met one before. When I was a college senior at Kansas State, I took a required ethics course, environmental of course, and my prof was a young man, obviously not from Kansas. He was ethnically Jewish (the first I had ever known), athiest by religion and veggie by what I thought was total strangeness. Nine months later, I left for Peace Corps and began my own personal journey into the land of the wierd. At the end of two years, I myself had morphed into an athiest and had started the journey of becoming veggie. It seems I could do nothing to change being ethinically Czek. A few weeks after returning to Kansas, I bought my first Moosewood cookbook. I did it because I saw how the land was being destroyed in this island paradise for a few burgers for us to eat. I did it because I saw that my neighbors could live well and eat meat only every week or so and even then, it was a tiny portion. I did it because my mother was no longer cooking for me. I also did it because of the few veggie resturants in the country and how the volunteers all flocked to them, they were sooo good! If I had met a veggie when I was a child, if I had been told that it was possible, if I had been taught about the environment in school, if I had been shown a nation of malnourished people.... ya maybe. But, most Americans have not and will not be, ever. Angry veggies only allienate everyone else further... so I bring yummy dishes, like my hummus artichoke wraps (Vegetarin Times this year, with a few modifications) and go on. Maybe my being there, eating beans, will influence the thinking of someone years down the road... you never know.
