You can't really go wrong when you use fresh veggies. :-) Gazpacho 4 cups tomato juice 2 cups chopped seeded peeled tomatoes 1 cup diced green pepper 1 cup diced celery 1 cup diced seeded cucumber 2 garlic cloves, minced 1/2 cup diced onion 1/3 cup tarragon vinegar 2 Tbs minced fresh parsley 1 Tbs minced chives 1 tsp Worchestershire sauce 1 tsp salt, optional 1/2 tsp pepper 2 Tbs vegetable oil In a large bowl, combine the first 13 ingredients. Cover and chill for at least 4 hours. Stir in oil before serving. Serve cold. Yield: 8 servings Diabetic exchanges: One 1-cup serving (prepared with low-sodium tomato juice and without salt) equals 2 vegetable, 1 fat; also, 96 calories, 56 mg sodium, 0 cholesterol, 13 gm carbohydrate, 2 gm protien, 4 gm fat. ~ P_T ~ To be well informed, one must read quickly a great number of merely instructive books.
