Three Rice Pilaf

Three Rice Pilaf

 

1/2 cup uncooked brown rice

1/2 cup finely chopped carrots

1/2 cup chopped onion

1/2 cup sliced fresh mushrooms

2 Tbs cooking oil

1/2 cup uncooked wild rice

3 cups vegetable broth

1/4 tsp dried thyme

1/4 tsp dried rosemary, crushed

1/2 cup uncooked white rice

1/3 cup chopped dried apricots

2 Tbs minced green onions

1/4 tsp salt

1/8 tsp pepper

1/2 cup chopped pecans, toasted

 

In a large saucepan, saute brown rice, carrots, onion and mushrooms in oil

for 10 minutes or until rice is golden. Add wild ricem broth, thyme and

rosemary; bring to boil. Reduce heat; cover and simmer for 25 minutes. Stir in

white rice; cover and simmer for 25 minutes or until liquid is absorbed and

wild rice is tender. Remove from heat; stir in apricots, green onions, salt and

pepper. Cover and let stand for 5 minutes. Sprinkle with pecan just before

serving. Yield: 8 to 10 servings.

I was just wondering what I wanted for supper

tonight:) This sounds perfect - and as amazing as it

sounds, I have every ingredient (except shrooms of

course - blech). I just bought dried apricots last

night to make fruit bars for the kids today and have

plenty left. And I always keep all three rices on

hand!

LOL. Well, I wasn't going to mention this, but just as you leave out the

mushrooms, I left out the dried apricots when I made this recipe. ;-)
