Guest guest
In the original recipe, the author used real bacon (1 1/2 lb of the greasey stuff). Bleh. I adjusted this to fit my taste and diet, and I must say it is very good, and certainly healthier. If you find it isn't smokey enough for you, just add a bit of liquid smoke, or more MSF bacon strips. Easy Bean Bake 2 1/2 cups dry great northern beans (about one pound) 1 tsp salt 1 package (5.25 oz) MSF bacon strips, cooked and crumbled 1 cup packed sugar 3 Tbs molasses 3 small onions, chopped Place beans in a saucepan; cover with water. Bring to a boil; boil for 2 minutes. Remove from heat; cover and let stand for 1 hour. Drain, discarding liquid, and return bean to pan. Add salt, cover with fresh water; bring to boil. Reduce heat; cover and simmer for one hour or until beans are tender. Drain, reserving liquid. Combine beans, 1 cup liquid and the remaining ingredients in a greased 2 1/2 qt. baking dish. Cover and bake at 350 for 1 1/4 hours or until beans are tender, stirring occasionally (add additional reserved liquid if needed) Yield: 8 to 10 servings. ~ P_T ~ A good heart is better than all the heads in the world. -Edward Bulwer-Lytton, writer (1803-1873)
