Never ask me for advice, or you'll get an earful; and that's my best = advice to anyone. *lol* Let's see, here are a few things I do around here t= o make my lifestyle fit in more effortlessly. If I am making a casserole with= meat in it for the others, I simply scoop out my portion before adding the = meat, and bake it separately in one of those cute little mini bread loaf pa= ns. Works great. Also, my family has adjusted to the fact that ground beef no = longer means we eat a cow; I always use Yves brand ground round in recipes = that call for ground beef OR MSF crumblies. I keep plenty of meat-free substitute convenience foods on hand as well, like MSF chick patties, Boca = grillers and sausage, MSF meatballs for our bi-weekly spaghetti dinner, etc= .. Soups are another nice thing to fix where they don't miss the meat, or meat= can be added to their portion after removing mine. Providing a more hearty= veggie-style side dish to their meat entree makes it so I can eat that as m= y main course, and they just eat a bit as a go-along with their food. The lis= t goes on. Thanks, though I am not sure how honorable it is as there is a fair share of pigging out going on, but it is very fun. The people who host the = gathering live way up on a mountain in the middle of the woods; so pretty. = I usually opt to bring a huge tossed green salad (lettuce, broccoli, cauliflo= wer, spinach, carrots etc). I make up several homemade salad dressings to take along and, some beans, cheese, croutons, and other things to sprinkle on top if folks want to. This way I have something there I know I can eat that= is safe. Plus eating a lighter entree means I always have room for pumpkin pie= ! FromÊ " kate. When I posted that I love papas con chiles with my heuvos rancheros, it meant that I love potatoes pan fried with chili peppers (and onion, a little tomato and some cilantro)...Mmmm.
