Tomato-Basil Tart

Amazing how easy it is to make something so

tasty...Your guests will think you spent hours on it:)

 

 

1 9 " pie crust (go ahead, make it yourself - tastes

better)

1 cup firmly packed lemon basil (or regular) FRESH

4 large tomatoes

2/3 cup ricotta

2 eggs

1/2 cup parmesan cheese/divided into Tbsps

1 cup mozzerella cheese

dash salt

dash pepper

 

Slice tomatoes, salt and lay on paper towels to drain

for 45 minutes...Flip half way through.

Bake pie crust in a 450 degree preheated oven for 7-8

minutes (make sure to cut slits across bottom or

weight down) Toss about a Tbsp of parmesan on it as

soon as you take it out of oven.

In a food processor, blend basil until fine. Add

ricotta and blend until smooth. Add remaining

parmesan, add mozzerella, add salt/pepper to taste

(remember that tomatoes are salted).

Place one half of tomato slices on crust...Pour basil

mixture on top and smooth out...Place remaining

tomatoes on top. Bake at 350 for about 40 - 45

minutes. Serve with spinach salad.
