I don't know if I'll make these for T'day or not, but I have in the past, and they were fairly well-received. This year, it will just be my husband and myself, so I won't fuss much with the meal. This recipe is from an old (vegan) cookbook called 'Ten Talents' - it's kind of a weird cookbook (IMHO), but has some useful ideas. It was ahead of its time in some respects. Anyway...you could add a beaten egg to this recipe if you're not vegan, I think it would help to hold the croquettes together. Pat Thanksgiving Chestnut Croquettes 4 cups cooked brown rice 1 cups chopped fine boiled chestnuts 1 cup chopped celery (stalks and leaves) 1/2 cup minced onion 1/2 cup almond butter or natural peanut butter 1 tsp sage or other herb 1 tsp chicken-style seasoning (I don't know what this is, never used it) 1 tsp thyme salt to taste Bread crumbs, or fresh crumbled bread Saute the celery and onion, in oil. Add about 1/4 cup bread crumbs. Heat, stirring to prevent excessive browning. Turn into a deep bowl. Add remaining ingredients, mixing well with your hands. Add soft bread crumbs as necessary to make desired consistency for shaping patties. Shape into patties and sprinkle with oil and paprika.
