Guest guest Posted November 9, 2002 Report Share Posted November 9, 2002 Festive Green Beans 1 lb fresh green beans or one can (16 oz) green beans, drained 1/2 cup water 1/2 tsp salt, optional 1/4 tsp pepper 1/2 tsp garlic powder 3/4 cup Mexican stewed tomatoes or chunky salsa Cut beans into 2 inch pieces; place in a sauce pan. Add water and salt if desired; bring to a boil. Reduce heat and simmer for 15 minutes or until tender; drain. Add pepper, garlic powder and tomatoes; heat through. Yield: 6 servings Diabetic Exchanges: One 1/2 cup serving (prepared with fresh beans and sals without salt) equals 1 1/2 vegetable; also 35 calories, 225 mg sodium, 0 cholesterol, 8 gm carbohydrate, 1 gm protien, trace fat.
