Guest guest Posted November 7, 2002 Report Share Posted November 7, 2002 I’ve been homesick again (probably cuz I just found out I can’t go home for the holidays), and craving comfort food, so my mom called me this afternoon with this recipe. This pie was one of my favourite treats. It’s really rich, but so simple, and made with things we always have around the house. I’m going to make one tonite while I pout about being stuck in the US for Yule…. Flapper Pie Crust: 1 ¼ cups graham crumbs ¼ cup melted butter ¼ cup sugar Filling: 2 cups milk 3 egg yolks ½ cup sugar 2 ½ tablespoons corn starch pinch salt 1 teaspoon vanilla 1 teaspoon butter Meringue: 3 egg whites 3 tablespoons sugar - Combine crust ingredients and press into pie pan. Cook for about 10 minutes at 300F. Set aside. - Combine milk, egg yolks and sugar in a medium saucepan. Dissolve corn starch in a bit of cold water and add to milk mixture. Stir over medium heat until thick. Don’t leave this unattended as it will scorch easily. You need to stir almost constantly. - Bring filling to a boil very briefly, still stirring. Stir in salt, vanilla and butter. Pour into shell. Allow to set briefly - Beat egg whites and sugar into stiff peaks. Spread over top of pie and sprinkle with a few graham crumbs. Broil briefly, until meringue is golden brown (this happens VERY fast – be careful not to burn it!) - Chill pie in refrigerator until it’s completely set.
