Aloo Gobi Masala

I had a really nice head of cauliflower in the refridgerator and needed

something to do with it last nite, so I went searching for recipes.

This is what I ended up making, and it was delicious!

 

Aloo Gobi Masala

 

½ large head cauliflower

2 large potatoes

1 medium onion, finely chopped

1 tomato, finely chopped

½ cup frozen green peas (or fresh if you have them)

½ tsp ginger, minced

3 cloves garlic, minced

2 green chilis, thinly sliced

1 tsp cumin

1 tsp red chili powder

¼ tsp turmeric

1 tsp garam masala*

½ tsp ground coriander

3 tbsp vegetable oil (I used much less)

 

- Cut cauliflower and potato into medium sized cubes and wash thoroughly

- Heat oil. Add green chili, ginger and garlic and sautee for a few

seconds

- Add onion, and sautee over medium heat until golden

- Add tomato and peas. Cook until tender (just a few minutes)

-Add chili powder, cumin, turmeric, coriander, garam masala and salt to

taste. Mix well

- Add cauliflower and potato, and sturr well. Saute 5 minutes, then

cover and cook over medium heat until tender (about 10 minutes)

 

* If you can’t find garam masala (try Indian markets, or the ethnic

section of your grocery store), you can make your own as follows:

 

Garam Masala

 

20 grams black pepper

10 grams cloves

20 grams cinnamom

15 grams brown cardamom

10 grams cumin seeds

10 grams bay leaves

5 grams coriander seeds

 

- mix all ingredients and lightly toast

- grind and sieve to a fine powder
