Guest guest
These are like nothing I ever had while growing up, but when I saw the recipe I was drawn to trying them. My mom made some kind of molasses cookies that were soft and big; kind of cake-like and delicious. While these are small, frosted and melt in your mouth addictive. Sugar And Spice Cookies 3/4 cup shortening 1 cup sugar 1 egg 1/4 cup molasses 2 cups flour 1 tsp baking soda 1 1/2 tsp ground ginger 1 tsp ground cinnamon 3/4 tsp ground cloves 1/2 tsp salt Lemon Frosting: 2 cups confectioners sugar 3 Tbs butter or margarine, softened 1 tsp grated lemon peel 3 to 4 tsp lemon juice In a mixing bowl, cream shortening and sugar. Add egg; mix well. Beat in molasses. Combine dry ingredients; add to creamed mixture and mix well. Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350 for 8 to 10 minutes. Remove to wire wracks; cool. For frosting, cream sugar, butter and lemon peel in a mixing bowl. Gradually add lemon juice, beating until frosting reaches desired spreading consistency. Frost cookies. Yield: about 4 1/2 dozen ~ P_T ~ For what is a poem but a hazardous attempt at self-understanding: it is the deepest part of autobiography. -Robert Penn Warren, novelist and poet (1905-1989)
