Guest guest Posted November 6, 2002 Report Share Posted November 6, 2002 Potatoes O'Brien 1/2 cup chopped onion 1/2 cup chopped green pepper 1/2 cup chopped sweet red pepper 4 medium red potatoes, cubed 3 Tbs cooking oil 1/4 cup vegetable broth 1/2 tsp Worcestershire sauce 1 tsp salt In a skillet over medium heat, saute onion, peppers and poatoes in oil for 4 minutes. Combine broth Worcestershire sauce and salt; pour over vegetables. Cover and cook for 10 minutes or until potatoes are tender, stirring occasionally. Uncover and cook until liquid is absorbed, about 3 minutes. Yield: 4 servings ~ P_T ~ I met, not long ago, a young man who aspired to become a novelist.
