It was a recipe I found in a " regular " meat eater's cookbook, but it managed to adapt well enough using veggie meat alternatives. You may wish to spice it up more to suit your taste; I often do. Sausage Skillet Supper I pkg. Morningstar Farms Sausage crumbles OR Boca smoked sausage cut into pieces 1 can (14.5 oz) stewed tomatoes, undrained 1 can (16 oz) kidney beans, rinsed and drained 1 cup uncooked rice 1 cup water 2/3 cup fresh salsa or picante sauce In a medium skillet add all the ingredients; bring to a boil. Reduce heat, cover and simmer for 20-25 minutes or until rice is tender.
