Guest guest Posted November 3, 2002 Report Share Posted November 3, 2002 1 cup fresh snow pea pods 9 oz refrigerated fettuccini noodles 3/4 cup coconut milk 1/2 cup peanut butter 1/2 cup veggie broth 2 Tbsp lime juice 3 Tbsp soy sauce 1 clove garlic, minced 2 tsp sugar 1 tsp red pepper flakes 1 tsp crushed coriander 1 cup bean sprouts, divided 1 cup firmly packed basil, shredded and divided 1/4 cup chopped dry roasted peanuts Condiments: dried red pepper, chopped peanuts, lime wedges Trim snow peas; cut in half diagonally. Bring water to a boil in a large saucepan; add snow peas, and cook 45 seconds. Drain. Plunge into ice water to stop the cooking process; drain and set aside. Cook pasta according to directions; drain. WHisk together coconut milk and next 8 ingredients in a large saucepan. Cook over medium low heat, whisking occasionally, 5 minutes or until mixture is thoroughly heated. Add snow peas, pasta, 3/4 cup srouts and 3/4 cup basil; toss and place on a serving platter. Sprinkle with remaining sprouts, basil and 1/4 cup peanuts. Serve with assortment of condiments. ***I served this with tofu/chipotle eggrolls on the side (Very yummy, hopefully your local markets carry them) ***Very rich dish, next time I will use low fat coconut milk. **A little spicey (not too bad) but for those that do not like any heat at all, leave out the red pepper.
