However, I don't use a whole packet of Italian dressing mix and probably not a whole 1/4 cup of oil; I just splash a bit and don't measure. That is just too overpowering to my taste and I prefer a lighter flavor. You can adjust it to suit yourself. Squash and Pepper Saute 2 medium yellow squash, sliced 2 medium zucchini, sliced 1 medium sweet red pepper, julienned 1/4 cup olive oil 1 envelope (.7 oz) Italian salad dressing mix 3 Tbs red wine vinegar In a skillet over medium-high heat, stir-fry the vegetables in oil until crisp- tender, about 3 to 4 minutes. Sprinkle with salad dressing mix; toss. Stir in vinegar; mix well.
