Molasses Baked Beans

It dropped down to very chilly last night while we were out Trick'O'Treating.

Made me in the mood for baking up some of this today. How did you all

make out last night? I hope you had fun.

 

Molasses Baked Beans

 

2 lbs dry navy beans

5 qts water, divided

1 can (28 oz) diced tomatoes, undrained

1 1/2 cups ketchup

1 cup butter or margarine, melted

2 large onions, quartered

1/2 cup packed brown sugar

1/2 cup molasses

1 Tbs salt

1 Tbs liquid smoke or BBQ sauce

 

 

Place beans and 2 1/2 quarts water in a 6 qt. Dutch oven; bring to a boil and

boil for 2 minutes. Remove from heat; soak for 1 hour. Drain and rinse beans;

return to pan with remaining water. Bring to a boil. Reduce heat; cover and

simmer for 1 hour or until beans are tender. Drain, reserving cooking liquid.

Return beans to pan; add remaining ingredients and mix well. Cover and

bake at 350 for 2 to 2 1/2 hours or until beans reach desired consistency,

stirring occassionally. Add some of the reserved cooking liquid if too thick.

Yield: 16 to 20 servings

Terrible! ;~) It was cold here in East Tennessee (Our first cold night of the

season.) and I ate my kid's candy faster than they could get in in their bag!

(According to my oldest!) But...we had loads of fun and THAT is all that

matters.

The baked beans sound wonderful!
