Guest guest Posted October 30, 2002 Report Share Posted October 30, 2002 Roasted Potatoes 2 Tbs lemon juice 4 tsp olive oil 1/2 tsp dried thyme 1/2 tsp garlic salt 1/8 tsp pepper 6 small red poataoes (about 1 lb) quartered In a medium bowl. combine lemon juice, oil, garlic salt and pepper. Add poataoes; toss to coat. Place in an 8 inch square baking pan that has been coated with non-stick cooking spray. Bake uncovered at 450 for 40 minutes or until potatoes are tender, stirring occasionally. Yield: 2 servings Diabetic exchanges....
