good alternative to eggplant. I received permission

> 3 large zucchini squash

> 1 cup of Italian seasoned bread crumbs

> 1 8oz bag of Parmesan cheese

> 1 can of Italian seasoned tomatoes

> 1 jar of spaghetti sauce

> Preparation

> Preheat oven at 400 degrees

>

> Cut zucchini lengthwise and bread the zucchini

> Fry zucchini until crisp.

> In an 8x11 pan and layer the zucchini, seasoned

> tomatoes, Parmesan

> cheese, spaghetti sauce--keep layering until pan is

> full.

>

> Place in oven and bake for 20 minutes or until

> cheese has melted.

> Serve hot and enjoy.
